Lemon Poppy Seed Loaf. The Vaishnava Chef By Ananga Sundari Dasi Ingredients 2 cups flour 1/2 cup sugar 1/4 cup butter 1/4 cup oil 1 cup buttermilk 2 tblsp lemon juice 1 tsp lemon zest 1 tsp baking powder 1 tsp baking soda 1 tsp vanilla extract 2 tsp poppy seeds Method Preheat the oven to 180ºC. Sift all dry ingredients including poppy seeds and set aside. Beat together sugar butter and oil until sugar is well dissolved immediately add buttermilk lemon juice lemon zest and vanilla extract whisk well. Gradually add dry ingredients and fold do not stir constantly as mixture will turn out stiff and cake will be hard. Pour batter into a greased loaf tin and bake until done (skewer test). I made a loaf out of this recipe but muffins will work well too. Offer to Krishna and serve.
